This Festive Drink – How to Make It

We present a home-style version of a drink from a new cocktail list. It's a large-volume pre-mixed which is packed full of flavours of the festive period, rendering it ideal for your holiday party. Reserve the remaining cordial you can use for breakfast cocktails, puddings, or for another batch of the drink.

Bikini Recipe

Makes enough for 10 guests

To make the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Premix (makes 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Place the listed ingredients in a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Then, remove from the stove allowing it to reach room temperature entirely. Pour to a clean bottle, seal and refrigerate it in the fridge, it can be stored for around one month.

Preparing the Cocktail Base: Mix every spirits and syrup in a sizeable container, allow it to infuse for an hour, then strain , ideally through a fine cloth, making it fully clarified.

To serve: Pour 85ml of the premix to a cocktail shaker containing ice, gently stirring carefully for one minute until cold. Strain into a frosted cocktail glass or similar, top with a few cranberries and finish by giving it a light spray of mandarin oil over the drink.
